Do you know what today is? It’s National Popcorn Day! Which means I’ll be spending my evening shoveling popcorn into my mouth, binge watching Netflix. Honestly, there’s no other way I’d rather spend my Friday night.
It’s actually our family weekend tradition. Every Friday night, we eat dinner in the living room and watch movies until we pass out. My husband usually munches on nachos, while the kids and I make our own popcorn. B likes to make kettle corn with sprinkles, while I on the other hand enjoy a few handfuls of Truffle Parmesan Popcorn.
If you have never made your own popcorn, you’re missing out. If you’ve never made it using truffle oil, you’re definitely missing out!
I recently discovered truffle oil while my husband and I were celebrating our 9th wedding anniversary. He took me out to an amazing steakhouse were I was introduced to cauliflower truffle gratin. Oh my goodness you guys, this was the most incredible dish I’ve ever eaten! Seriously, my taste buds have never been so happy. From that moment on, I was hooked.
Everyone's favorite movie night snack just got upgraded. Add truffle oil for an out of this world experience.
- 3 tbsp. peanut oil
- 1/2 c popcorn kernels
- 1 tsp. truffle oil
- 1/4 c parmesan cheese, shredded
- salt to taste
- parsley to garnish
- Start by placing the peanut oil in a large pot over medium-high heat.
- Add popcorn kernels and salt, ensuring the kernels are well coated with oil.
- Cover with lid and shake often to avoid burning.
- Once the popping slows down, remove from heat.
- Transfer the popcorn into a large bowl and drizzle with truffle oil, continuously tossing.
- Add salt and parmesan cheese. Toss some more.
Ever since I can remember we’ve always experimented with different popcorn recipes. From spicy parmesan popcorn, to chocolate covered popcorn, we’ve pretty much tried it all. We’ve even paired our favorite wines to our many recipes. I’d like to consider myself somewhat of a popcorn connoisseur, but that’s just my opinion.
When using truffle oil, I learned that a small amount goes a long way. This recipe calls for only 1 tsp. however, you can add as much or as little as you’d like. It’s as simple as pouring the oil onto already popped kernels, and tossing with freshly grated parmesan cheese. It doesn’t get much easier than that!
