Over the weekend, our favorite college team lost to our largest rival. But that didn’t stop us from having a good time. We spent the afternoon with friends, drinking beer and eating incredible food. So today, I am sharing one of my favorite game day recipes that I know you’ll love!
When it comes to tailgating, and by tailgating I mean sitting on my couch, it doesn’t get any better than warm Creamy Spinach Artichoke dip. Don’t get me wrong, I love pizza and wings. But there’s something about this cheesy concoction that I simply cannot get enough of.
When my mother-in-law told me about how all her friends raved about her go to appetizer, I knew I needed her recipe! And do you want to know what the best part is? It’s so simple! When you have a room full of hungry football fans, the easier the better!
All you need is:
14 oz. can of artichokes, chopped
8 oz. bag of frozen spinach, thawed and drained
2 cups mozzarella
1 cup parmesan cheese
8 oz. cream cheese
1 tsp. garlic powder
1 cup Mayonnaise
Mix all ingredients together and bake in a shallow dish for 25-30 minutes at 350 degrees, and enjoy! A few tips that make this dip even better, if that’s possible, is to use REAL cheese. I buy a brick of parmesan and grate it myself, doing this step really makes the flavor pop. Same thing with mozzarella, I get a big ball and chop it.
The other upside to this recipe, is that it contains spinach; so it must be healthy, right?!? Pair with pita bread or chips and I promise, you will not be disappointed. If I am entertaining at home I’ll prepare it in my oven, but if you’re on the go, throw in a crock pot and it will be just as delicious!

- Preheat oven to 350 degrees
- In a medium bowl, combine all ingredients and mix well
- Bake in shallow heat proof dish for about 15-30 minutes
- Dip is done when the center is warm and bubbly
