I have some exciting news to share with you.. our pack out is officially over. I cant even begin to describe how stressful it has been. But now that it’s all over, I feel as if a huge weight has been lifted. The only downside to scheduling our move so early, is living in a house with close to nothing in it!
Luckily, we’ve had amazing weather so we were able to spend most of the weekend outside. We finally had some time to focus on anything but moving. We played at the park, had a BBQ and took a long evening walk. I couldn’t have asked for a better weekend.
But before we start taking about Spring, I want to share one last comfort food with you. This is my husbands favorite go-to recipe. In fact, he deserves all the credit for this one! I’m sure most of you are familiar with the inexpensive “college food,” Ramen Noodles, right?! Well, this Ramen Bowl is anything but ordinary.
It combines all the savory beef flavors, with fresh cilantro and spicy jalapenos. Who wouldn’t want to slurp down a warm bowl of that?
It’s easy, delicious and quick! All of my favorites things. And the best part is that you can make this with 6 ingredients or less! Of course there are many ways to make a Ramen Bowl, but this recipes is probably our favorite. Pair with a sushi roll and sake, and you’ve got yourself a perfect date-night in.
All you need is:
1 package of beef Ramen
1 c beef broth
1 medium boiled egg, halved
2 green onions, chopped
1 jalapeno, slice
1 tbsp. cilantro
In a small saucepan, bring salted water to a boil. Place the egg in the water and gently boil for 7 minutes. In the meantime, slice your green onion and jalapeno. Once the egg is done, immediately place in a bowl of ice water. Now, in a separate saucepan, bring beef broth to a boil. Add noodles and cook for no more than 5 minutes. Once that is complete, pour into bowl and garnish with toppings
