I can’t believe summer is coming to an end. A part of me is sad that another school year is approaching, while the other part is beaming with excitement.
With less than two weeks until the big day, I’m running around making all of our last minute preparations. One of those, is coming up with a few quick, yet satisfying snack ideas. By the time B gets home from school, he’s literally starving! To keep him from grabbing something unhealthy, I’ve premade a few jars of Maple Pecan Yogurt Parfait.
This stuff is the bees knees. The smooth creamy yogurt, paired with sweet crunchy granola is a combination to die for! Not only do my kids love it, but it’s probably my favorite snack too. In fact, I could eat it anytime of the day. It’s great for breakfast, or even a midnight snack.
Forget the store bought granola, this recipe calls for only natural ingredients, all of which I can pronounce.
All you need is:
2 c old-fashioned oats
1 1/2 c chopped pecans
1/4 c light brown sugar
1/4 c 100% pure maple syrup
1/4 coconut oil
2 1/2 tsp vanilla
1/4 tsp salt
1/2 tsp cinnamon
Start by preheating oven to 300 degrees. Take your baking sheet and line with parchment paper. In a large bowl, whisk together sugar, syrup, oil, vanilla, salt and cinnamon. Then, add oats and nuts, mix well.
Using a rubber spatula, pour the batter onto the baking sheet. Gently spread mixture evenly in the shape of a rectangle. Once that is complete, bake uncovered for 15 minutes. Cover with foil and bake another 15 minutes. Color should be a light golden brown. Let cool for 30 minutes then gently cut into squares or break into small pieces. Store in air tight contained for up to two weeks.
It’s that easy! Sometimes I make a second batch and cut into bars for a quick snack on the go. It especially comes in handy when we’re running late in the morning. Because that never happens…
And the separate granola storage idea, genius! When my neighbor showed me this hack using an empty applesauce container, inside the mason jar, it was seriously life changing! I do it all the time now. It’s also good for storing veggies and dip. Just grab a jar and go. However you like your granola, in milk or by the handful, I hope you enjoy this recipe!
