As a kid, one of my favorite memories was camping with my family, telling ghost stories around the fire, making one s’more after another. The ooey gooey goodness stuck to all ten fingers. I was in heaven. But whether we’re camping or not, enjoying a few s’mores this summer is definitely on our family’s bucket list. With this Gluten Free S’more Brownie recipe you can sit back and enjoy every bite, no fire necessary.
All you need is:
Gluten free brownie mix
2 cups marshmallows
1 cup gluten free graham crackers, finely crushed
2 tbsp. butter, melted
The crunchy graham cracker crust topped with a layer of warm, fudgy, chocolate brownie-makes this the ultimate s’mores treat! Not to mention the marshmallows toasted to perfection.
First, start with a homemade crust by combining 1 cup finely crushed graham crackers and 2 tbsp. melted butter. Once combined, press into a 8×8 inch pan and bake for about 5 minutes. In the meantime, prepare the brownies according to package.
As soon as the crust is golden brown, pour the brownie batter on top and bake for approximately 28 minutes. When there is about 5 minutes left on the timer, add a layer of marshmallows.
The recipe is quick and simple! Honestly, the hardest part was anticipating the buzzer. Maybe I should allow to cool, but twenty-eight minutes seems long enough. So what if it’s a hot mess- literally. Isn’t that the best part? And because I am a lover of all things chocolate, I even topped a few pieces off with MORE marshmallows and a gluten free dark chocolate ganache. I guarantee all five layers will melt in your mouth.
If you have leftovers, and I emphasize if, pop it in the microwave for 10 seconds and you’re good to go! On the other hand, who’s going to have leftovers? Anyways, with every weekend filled with BBQ’s and picnics, this is the perfect dessert to whip up last minute.
