Let me just start by saying, the struggle is real! Ever since Ben’s schedule changed (again) it seems like he’s never home. I guess it isn’t such a bad thing, considering once we get to Guam he’ll start a deployment schedule. But man, I forgot what it was like! No down time, no help with dinner… just me and the kids.
Don’t get me wrong, I love my kids. More than anything, but I will be the first to admit that I am far from perfect, and yes I do get stressed. Sometimes we eat cereal for dinner, and I let B play video games more than he should. Most days we have a happy, healthy functioning home. Other days, I contemplate putting Bailey’s in my coffee.
In an effort to make my life a little less stressful, I have compiled a list of easy dinner recipes for the entire week! I wanted this list to be practical, delicious and most importantly, simple!
