Last weekend it snowed about 5 inches in Virginia Beach. Born and raised in Michigan, this was no big deal. But to the rest of the city, it was complete chaos. I remember having to shovel my car out of the snow, just to get to class. So, when the entire city closed down because of a little snow, we had to get creative.
After breakfast we played in the snow for hours! We went sledding, ran around the house and of course, built a snowman. So by the time dinner came around, we were exhausted. Ordering pizza was clearly out of the question, so we gathered what we had in the pantry (we were ill prepared for the weather) and created a one pot meal!
I love one pot meals for so many reasons. One obviously being the minimal clean up. The less mess for mom the less stress for everyone! Hey- that may be my moto of the year. But seriously, who doesn’t love throwing ingredients into ONE pot and in no time, dinner is ready. In light of my new found love, I have rounded up 10 one pot meals I want to try this year.
